The three competition productions

Each candidate prepares the three categories below, with the quantities required for the photo session and tasting.

🟢 HEALTHY BAGUETTE (Heart of the competition)

The competition’s main production.

Candidates must prepare:

  • 2 items for the photo session
  • 5 items for tasting (10-member jury)

🟢 HEALTHY SANDWICH BREAD

Protein-based filling.

Format and composition distinct from the baguette.

Candidates must prepare:

  • 2 items for the photo session
  • 5 items for tasting (10-member jury)

🟢 SEMI-WHOLE BREAD / HERB CIABATTA

Semi-whole bread or ciabatta.

Free choice of aromatic vegetables (chlorophyll-rich ingredients).

Candidates must prepare:

  • 2 items for the photo session
  • 5 items for tasting (10-member jury)

🔴 Official requirements — setup day (10 June)

Mandatory on site

Signature sourdough (levain)

Each candidate must bring their own sourdough starter — a cornerstone of their bakery identity and craft.

Official Nuthex attire

Exclusive event attire will be given on the day to every candidate, personalised with first and last name, reflecting excellence and a unified competition image.

This section defines the technical and nutritional framework.

🌾 Flour types & raw materials

Primary flours (mandatory)

The following flours form the technical and nutritional foundation of the Healthy Baguette Competition. At least one of these flours must be used in the formulation.

  • Semi-whole wheat flour (T80 to T110)
  • Whole wheat flour (T150)
  • Spelt flour
  • Rye flour
  • Barley flour
  • Oat flour
  • Khorasan wheat flour (Kamut)

These flours are valued for their nutritional density, fiber content, and functional baking properties.

Complementary flours (optional)

Participants may incorporate complementary flours to enhance nutritional value, functionality, or innovation, provided they remain coherent with the competition's objectives.

  • Chickpea flour
  • Lentil flour
  • Fava bean flour
  • Quinoa flour
  • Buckwheat flour
  • Lupin flour

Complementary flours should be used strategically and in balanced proportions, with a clear nutritional or functional purpose.

🥗 Ingredients & nutritional policy

✅ Approved ingredients

The following ingredients are authorized, provided they are used with precision, balance, and nutritional intent:

  • Drinking water
  • Natural sourdough
  • Lightly refined salt
  • Seeds and sprouted grains
  • Natural fibers and functional improvers
  • Natural flavorings (herbs, spices)

All ingredients must contribute to digestibility, nutritional value, and sensory quality.

❌ Prohibited ingredients

The use of the following ingredients is strictly forbidden, as they conflict with the competition's nutritional standards:

  • Refined sugars
  • Industrial syrups
  • Hydrogenated fats
  • Chemical additives
  • Artificial flavor enhancers
  • Industrial baking improvers

Any non-compliant formulation may result in penalties or disqualification, depending on severity.

⚙️ Production techniques

🥣 Mixing & fermentation

The preparation process must reflect advanced artisanal mastery serving nutritional quality. Required practices include:

  • Slow or controlled mixing
  • Long fermentation strongly encouraged
  • Precise control of time and temperature
  • Preservation of nutrients and dough integrity

Excessive mechanical stress or accelerated processes that compromise nutritional value may be penalized.

🔥 Shaping & baking

Shaping and baking must respect both artisan technique and thermal precision. Expected standards:

  • Manual or semi-manual shaping
  • Controlled baking temperature
  • Thin, evenly developed crust without burning
  • Internal core temperature between 96–99°C

The final baguette must demonstrate structural balance, proper baking, and consistent execution.

💡 Innovation & creativity

Participants are encouraged to propose innovative recipes that integrate functional ingredients, original textures, and modern nutritional concepts—while fully respecting the established technical framework.

Innovation may include:

  • The use of functional or bioactive ingredients with a clear nutritional purpose
  • Creative textures enhancing digestibility and sensory experience
  • Modern interpretations of traditional baking techniques
  • Evidence-informed nutritional concepts aligned with health objectives
  • Creativity is valued when it adds meaning, functionality, and coherence—never at the expense of taste, craftsmanship, or nutritional integrity.
